Menu Plan Monday and a Cyber Baby Shower (with prizes!!)

Monday: Beef stroganoff
Tuesday: Wild rice chicken casserole-recipe below
Wednesday: Meatloaf-recipe below
Thursday: Japanese curry (comes in a box at Walmart)
Friday: Tacos
Saturday: Chicken Spaghetti--this is sooooo good!
Sunday: Pork Chops and mashed potatoes

Wild Rice Chicken Casserole-from my mother 1 6 1/4 oz. package quick cooking long grain and wild rice (like Uncle Ben's) 2 cups cooked chopped chicken 1 8 oz sliced water chestnuts, drained (I actually leave these out) 1 cup finely chopped celery 1 1/4 cup finely chopped onion 1 cup light mayo 1 10 3/4 oz can cream of mushroom Cook rice according to package directions. Combine rice with chopped chicken, water chestnuts, mayo, cream of mushroom, and onion. Put in 9x13 pan. Bake at 350 degrees for 40 minutes.

Crock Pot Meat Loaf-My Life As Annie
Ingredients: 2 1/2 pounds ground beef 1/4 cup ketchup 1 tablespoon brown sugar 1 egg 1 cup italian breadcrumbs or crushed crackers 1 tablespoon Worcestershire sauce 1 small onion (diced) 1/4 cup water Directions: Mix all ingredients in a large bowl. Form into a meatloaf shape that will fit into your crock pot. Cut a strip of foil and place under the meatloaf in crock pot. Cut it long enough to cover the bottom and sides of meatloaf. Place meat loaf in crock pot and top with an additional 2 tablespoons ketchup & chili sauce. Cover and cook on low for approximately 8 hours or high for four hours.
