Menu Plan Monday-recipes included

Sunday: White sauce stroganoff

Pizza Crust-for one pizza

1/4 packet yeast
1/3 tsp granulated sugar
3/4 cup 110 degree water
1 3/4 cup flour
1/2 tsp salt

Add yeast and sugar to the warm water, let rest for 8 minutes. Combine flour and salt. Pour yeast mixture over flour mixture and mix well. Knead for 2 minutes. Let rest for 5-10 minutes. Roll out in pizza pan, spread on favorite sauce (I just use leftover pasta sauce), cheese and any other toppings. I also drizzle a little olive oil on top. Bake in a 500 degree oven for 8-12 minutes.

**Can add garlic and/or Italian seasoning to flour mixture-I ALWAYS do this, I think it tastes so much better!**

Chicken Enchiladas-from Audra Bollard

3-4 large chicken breasts, cooked and shredded
2 cans cream of chicken soup
1 cup sour cream
1/2 of a small can mild diced green chilies
8 oz. sharp cheddar cheese, grated
8 oz. jack cheese
1/4 cup green onion, chopped
Approx 14 tortillas (I use flour, so I use less--Audra uses corn, you can decide)

Mix soup, sour cream, and green chilies together. Spread a thin layer of this mixture on the bottom of a 9 x 13 baking dish. Mix grated cheese and green onions together. Warm up tortillas in the microwave for about 10 seconds. Fill each tortilla with cheese/onion mixture and some shredded chicken. Roll and place seam side down in baking dish. Top with remaining soup mixture and sprinkle any remaining cheese on top. Back at 350 degrees for 30 minutes.

**This is ALWAYS a favorite!! A couple of things I do differently:

  • Audra's recipe says a pound of each cheese, I cut that in half (cheese is really expensive, especially now, and I always had so much extra!)
  • I don't always use the specified cheeses, most of the time I buy the Mexican blend in bulk at Costco and use that.
  • On top of the cheese, I add a very thin layer of salsa (Picante sauce works) before baking, I think it adds more flavor.
