Menu Plan Monday-recipes included

Monday: Zak's sister Katy is having us over for dinner-yea! I don't have to cook!
Tuesday: Mom's Salmon (recipe below)
Wednesday: Chicken Alfredo (recipe below)
Thursday: Zucchini Chicken
Friday: Ribs and potatoes (we went to a friend's for dinner on Sunday instead of having this)
Saturday: Ward LUAU
Sunday: Chicken and Rice Casserole

Mom's Salmon
For up to 4 fillets (anywhere from 4-8 oz)

1/4 cup honey
2 T Dijon style mustard
1 or 2 T. melted butter
1 tsp Worcestershire Sauce
1/4 tsp. ginger
1/4 tsp. salt (to taste)
1/4 tsp pepper (to taste)
1 onion chopped

Combine honey, mustard, butter, Worcestershire sauce, ginger, salt and pepper in bowl to make sauce. Put the salmon (with or without the skin, but skin side down if leaving skin on) in a shallow, foil lined pan, sprayed with some non-stick spray. I punch a few holes in the salmon with a fork to hold the sauce better. Spoon the sauce on the fish and top with the chopped onion (can also use green onion or dried onion flakes, but I like regular yellow onion best). Back uncovered at 400 degrees for 20 to 22 minutes, depending on the size of the fillets and how flakey you want them.

Some alternatives: brown sugar, maple syrup or molasses in place of honey--orange juice instead of mustard--soy sauce or teriyaki in place of Worcestershire---toasted slice almonds or sesame seeds in place of onion

Alfredo Sauce-this is for you Kit :)

1 pint Heavy Cream
1 stick of butter
2 T cream cream
1 tsp garlic powder
1/2 tsp white pepper
1/2-3/4 C Parm. cheese

In a saucepan combine butter, heavy cream, cream cheese, garlic powder, and white pepper. Simmer until all melted and mixed well. Add Parm cheese. Simmer for 15-20 minutes (the longer the better, as long as you do not bring this to a boil due to the dairy products). You may wish to season with a little salt. Pour over your favorite pasta (this makes quite a bit sauce!).
